Complex spicy, black pepper and fruity (pineapple, apple, banana, kiwi, lemon) expressive yeast dominates. A hint of smoke is not inappropriate. Light biscuit and hay/straw. Low, lightly floral and grassy hops round out the background. Low sulfur levels are acceptable.
Bright, balanced fruity - lemon, apple, banana, etc. - notes with spicy - black pepper, coriander - characteristics as well. Medium perceived sweetness and body followed by a crisp, dry finish thanks to a high attenuation rate. Low grassy hops exist in the background. Medium straw/hay, grainy malt character.
While the finish is dry, this beer is medium-bodied, with a hint of creamy/chewy adjunct derived body. The best examples feature a spritzy carbonation level, increasing drinkability. Light bitterness, without astringency, also adds to the refreshing quality of this beer.
Complex, finishing clean and dry, with an interesting yeast-dominant fruit and spice balance. Creaminess and spritziness balance each other effortlessly in the best examples. Sulfur and fusel character should be kept to a minimum, allowing subtle grassy hop character to exist behind the expressive, unique yeast.
